Reindeer Stew – Poronkaristys

Poronkaristys, a reindeer stew, is a traditional Finnish and Lappish dish. The Sami people in Lapland have raised reindeer for centuries and this dish stems from their tradition.

Reindeer meat tastes somewhere between beef and game, tasty and lean. The thin strips of meat are usually marinated in beer. It is often accompanied by mashed potatoes and traditional lingonberry jam.

Ingredients for 4 people

  • 1 kg of reindeer meat
  • 2 ounces of lard or butter
  • Salt
  • Pepper
  • Onions


  • Cut the lard or butter into small pieces and heat it in a cast-iron or earthenware pan.
  • Slice the reindeer meat while it is still frozen and place it in the pan with the hot reindeer fat and cover.
  • When all the water has evaporated from the pan, brown the reindeer meat.
  • Add water, salt, white pepper and sliced onions.
  • Cook over medium heat for about half an hour.
  • Serve accompanied by mashed potatoes and typical lingonberry jam.
